THE SMOKE

We love the charred flavours that fire and smoke bring out of our fresh, local ingredients. We are Sri Lankan at heart and the island has amazing herbs, spices, vegetables, seafood and pork. Inspiration has no limits, and we allow ourselves complete freedom of expression and exploration.

Different cuisines taste amazing on the open flame, bringing out different elements of the dish. ​​All our dishes are cooked using wood fire, either smoked or chargrilled. We use Sri Lankan ingredients to make unique flavours which are inspired by cultures from all over the world.

THE BITTERS

The Smoke & Bitters cocktail ethos takes inspiration from Don The Beach & Trader Vic’s, with the addition of our passion for bitters and a fascination with the important role that smoky flavours can play in the creation of unique, contemporary cocktails.
